Las Pampas **
Washington, $

Don't pass on this winter's theme datedinner at Las Pampas after seeing Evitajust because you're avoiding red meat: The golden-skinned, boned grilled chicken is an authentic Argentine dish that is almost a match for such house specialties as the mixed grills and the short-rib steak.

Those who want typically Argentine fare will find it in the mixed grill, a sizzling platter laden with short-rib steak, kidneys, sweetbreads, blood sausages, and coarse-textured garlic sausages. Ask for a ramekin of chimichurria garlic-parsley sauce that elevates the meats of the mixed grill and the boneless grilled chicken into something out of the ordinary. And look to the wine list for some refreshingly fruity, low-tannin vintages from Argentina and Chile that complement beef, chicken, and the grilled fish of the day.

You may not have room left for dessertthe best choice is the flanbut a meal at Las Pampas is incomplete without a first course of empanadas de carne, a plate of light-crusted beef turnovers that rival Buenos Aires's best.
