The varied fare includes whole flounder with the meat removed and lightly stir-fried and the skeleton deep-fried until all but the backbone is edible. The steamed rockfish with ginger and scallions is also very good. Both seafood and meat casserolessuch as oysters and ginger, or beef and eggplantare another treat. Other choice dishes are scallops with black-bean sauce; baked salted chicken with a sauce of minced ginger and garlic; braised boneless duck with Eight Treasures, a melange of seafood and vegetables; and stir-fried vegetables, including both watercress and spinach with garlic.
