The familiar dips are well made, especially the creamy fish-roe-based taramasalata. Other good appetizers are the charred octopus tentacles and crisp fried calamari. Popular, too, are the moussaka, pastitsio, stuffed grape leaves, and spinach- and-cheese pies, which Uncle George offers in a single combination plate. Rotisserie dishes are good, although on a recent visit the pork butt was better than the baby lamb, which had been left on the fire too long.
Whole fish come grilled, fried, and pan-fried. Some, such as the whiting, cost less than $10. Be sure to order one of the vegetable side dishes, such as baked eggplant, stuffed zucchini, or oven-roasted potatoes.
Uncle George's Greek Tavern , 4936 Fairmont Avenue, Bethesda; 301/913-9233. Open Sunday through Thursday 11 am to 11 pm, Friday and Saturday 11 am to midnight. AE, D, MC, V.
