The long menu includes the familiar and the unfamiliar. In addition to fine samosas and pakoras, there are deep-fried dumplings (bonda) and lentil doughnuts (medhu vada) as well as idli, steamed and slightly spongy lentil-and-rice patties that resemble compressed cream of wheat and are served with a light sauce. The star main course is a selection of dosas, huge and very thin rice crepes folded to enclose a filling. Udupi Palace lists a dozen varieties on its menu, including thicker and puffier variations. Another good choice is the uttapam, a pizza-sized and -shaped pancake composed of rice and lentils and, if desired, studded with onions and chilies or other vegetables. Rice, breads (stuffed and unstuffed), desserts, and lassis (yogurt-based drinks) round out the menu.
