The specialties of these three consistently reliable Thai kitchens are some of the best Thai curries in or out of the city. When considering which one to include in your order, look to the splendid red curry with fish, the yellow curry with shrimp, or the Muslim-style beef curry. Some good partners for any of the curries can be chosen from among such dishes as deep-fried whole fish glazed with chili sauce; roasted duck salad; chicken with watercress and peanut sauce; sautéed watercress with bean sauce; Thai sweet-and-sour pork; and a highly spiced stir-fry of rice noodles, vegetables, and meat.

The Adams Morgan branch is the only area restaurant that devotes a section of its dining room to traditional Thai dining, where patrons sit on gilt-embroidered, chair-shaped cushions. The Rosslyn Star of Siam is the largest of the three, a jazzy cafe in the popular style favored by modern Thai restaurants. Occupying a narrow townhouse on 19th Street, the original Star is the smallest and most modestly decorated.
