This one-dish meal starts with a bowl of anise-flavored beef broth with thin-rice noodles. Thinly sliced beef is added at the last moment and is cooked quickly by the heat of the broth. You also get a side dish with fresh bean sprouts, fresh mint leaves, lemon, and green chilies, which you may add at will. The table has other condiments, fish sauce, chili sauce, and hoisin sauce, but be sparing with these so you don't lose the rich flavor of the broth.
